Mushroom soup

Ingredients
- 350 g mushrooms (mixed)
- 50 g butter
- 1 tbsp parsley chopped
- 1 clove garlic
- dash salt
- black pepper freshly ground
- nutmeg freshly grated
- large chunk of bread
- 1 litre vegetable stock
Garnish
- 4 tbsp creme fraiche
- 4 tsp parsley roughly chopped
Instructions
- Melt the butter in the pan and add the mushrooms. Cook on medium heat until the juices run
- Meanwhile prepare the stock and break the bread into pieces to add soak in the stock
- Add the garlic, parsley, nutmeg, salt and pepper to the mushrooms and stir through
- Pour the stock with the bread into the pan. Simmer for 15 minutes with lid
- Blend the soup with a stick blender
