Vegetarian Tarte flambée / Flammkuchen

This Alsace recipe adapted to a delicious vegetarian version.

Ingredients
  

Dough

  • 450 g ​ plain flour
  • 4 tbsp olive oil
  • 2 egg yolks
  • 2 pinches salt
  • 200 ml ​ lukewarm water

Topping

  • 1 tbsp olive oil
  • ½ red pepper chopped small
  • ½ green pepper chopped small
  • ¼ courgette very thinly sliced
  • 1 tbsp fresh rosemary chopped
  • 200 g crème fraîche substitute soured cream
  • 2 tsp wholegrain mustard
  • pinch salt
  • sprinkle pepper
  • 2 small onions thinly sliced
  • 120 g roll of soft goats cheese
  • 1 handful fresh basil torn

Instructions
 

Dough

  • Add the flour, olive oil, egg yolks, salt and lukewarm water to a bowl and knead to form a smooth dough. Brush the dough with 1 tablespoon of olive oil and wrap in a re-usable plastic bag. Leave to rest at room temperature for about 30 minutes.
  • Halve the dough and roll out into two thin sheets, each of which fits on a baking tray.

Topping

  • Preheat the oven to 250ºC (fan oven: 230ºC) .
  • Finely chop the peppers and thinly slice the courgette with a cheese slicer. If you don't have one use a thin bladed knife. Add the olive oil to a frying pan and put on a high heat. Add the vegetables and rosemary, and stir through. After a minute or so turn down to a medium heat, stirring occasionally. Cook until the peppers are mostly cooked through.
  • Mix the crème fraîche with the mustard, salt and pepper. Spread the topping on the dough and smooth it out.
  • Slice the onions very thinly and spread them on the surface. Add the red and green peppers and lay the strips of courgette across the surface. Slice the goats cheese roll into 8 and place on topBake the flammkuchen in the preheated oven for around 10 minutes until it turns brown or bubbles.
  • Sprinkle over the torn basil leaves over the top. Cut into squares and serve
