Lebkuchen
Ingredients
- 250 g plain flour
- 85 g ground almond
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- ½ tsp bicarbonate of soda
- pinch ground cloves
- pinch grated nutmeg
- pinch black pepper
- 1 tsp Baking powder
- 200 ml 200ml clear honey
- 1 zest of 1 lemon
- 85 g butter
- For the icing
- 100 g icing sugar
- 1 egg white beaten
Instructions
- Preheat the oven to 160ºC.
- Mix all the dry ingredients in a bowl
- Beat the honey and butter together adding the lemon zest
- Add the flour mixture to the liquid and mix together with a spatula
- Divide the mixture into 3cm balls and flatten on a baking tray
- Bake for 15 minutes and transfer to a cooling rack
- When cool, mix the icing sugar and egg white. Drizzle the icing over the biscuits and allow to set
