Cheese Scones

This recipe was created to use up sourdough discard however if you do not have any a simple substitution of more self-raising flour and water

Ingredients
  

  • 250 g Self raising flour
  • 1 pinch Salt
  • 75 g Butter
  • 130 g Sourdough discard *
  • ½ tsp Baking powder *
  • 100 g Mature Cheddar grated
  • 135 ml Milk + more for brushing

Instructions
 

  • Weigh out the flour, baking powder and salt and mix.
  • Cut the cold butter into small pieces. Rub the butter into the flour until it resembles breadcrumbs
  • Mix in the grated cheese, sour starter discard and mix well with a spatula
  • Grease the muffin tin. Take pieces of dough and loosely make into a ball and place the ball into the tray. Slightly flatten but do not push to the edges of the tray. This recipe should make 12 balls. Brush the top with milk
  • Bake at 180ºC for 10 minutes or until brown.

Substitutions
Sourdough discard and baking powder can be replaced with additional 65g self-raising flour (added with the flour at the beginning) and 65g water (added with the mi
