Vegan Pancakes

Ingredients
  

  • 120 g Plain Flour
  • ½ tsp Baking powder
  • 250 g Almond soy or oat milk
  • 3 Tbsp Coconut oil
  • Coconut or sunflower oil for frying

Instructions
 

  • Put the flour in the bowl and then add the milk and oil. stir/beat well so that all the ingredients are thoroughly blended but do not use whisk
  • Cover and put the batter in the fridge for half an hour
  • Put a small amount of oil, about 1 tsp, in the frying pan and heat up to medium heat. Use a nylon brush or a pice of kitchen roll to make sure the pan is fully covered in oil.
  • When the pan is ready, use a soup ladle to pour the batter into the pan. Pick up the pan and swirl it around to spread the batter as evenly as possible and return the pan to the heat
  • When the batter has firmed up and you can move the pancake around the pan then flip it over and cook through from the other side
  • Serve on to a warm plate. Sprinkle with sugar and lemon or topping of your choice
