Dab Meurniere

Ingredients
  

  • 250 g Dab Fillets
  • 2 tsp Olive oil
  • 10 g Butter
  • Flour for dusting
  • Fresh parsley + 1 sprig to garnish

Instructions
 

  • Wash the fish and pat dry with paper towel.
  • Season with salt and pepper and dust with flour
  • Heat up a tablespoon of butter with the olive oil in large flat frying pan or skillet to a medium heat. Cook the fish for 2 minutes per side depending on thickness.
  • The turn over once again. Add some butter and chopped parsley and cook for another 2 minutes.
  • Squeeze the lemon over the fish and dress with sprig of parsley
  • Serve with
  • Boiled new potatoes with skins. Drain the potatoes, sprinkle with sea salt and return to the heat for 30 seconds, tossing the potatoes and searing in the salt.
