Dab Meurniere
Ingredients
- 250 g Dab Fillets
- 2 tsp Olive oil
- 10 g Butter
- Flour for dusting
- Fresh parsley + 1 sprig to garnish
Instructions
- Wash the fish and pat dry with paper towel.
- Season with salt and pepper and dust with flour
- Heat up a tablespoon of butter with the olive oil in large flat frying pan or skillet to a medium heat. Cook the fish for 2 minutes per side depending on thickness.
- The turn over once again. Add some butter and chopped parsley and cook for another 2 minutes.
- Squeeze the lemon over the fish and dress with sprig of parsley
- Serve with
- Boiled new potatoes with skins. Drain the potatoes, sprinkle with sea salt and return to the heat for 30 seconds, tossing the potatoes and searing in the salt.
