Spicy cherry chutney with grilled feta

Ingredients
  

  • 400 g feta good quality
  • 1 tsp olive oil
  • 1 tsp dried mint or oregano

Spice Cherry Chutney

  • 300 g cherries
  • 6 tbsp red wine vinegar
  • tsp yellow mustard seeds
  • ¼ tsp black peppercorns
  • 3 bay leaves if available
  • large pinch chilli flakes
  • 3 tbsp sugar

Instructions
 

Chutney

  • Wash the cherries and remove the stones.
  • Put all the chutney ingredients together in a small saucepan and bring to the boil. Simmer until the cherries are shiny and starting to burst (about 12 minutes).
  • Remove from the heat and set aside to let the favours infuse a little.

Grilled Feta

  • Heat the grill to high.
  • Line a baking tray with parchment. Slice the feta into 8 pieces and lay on the baking tray. Drizzle with oil and scatter over the dried mint or oregano. Grill for about 5 minutes until the surface is starting to brown. Different types of feta will vary the grilling time. The feta should not melt. If the feta is starting to melt, turn the heat down. You want the feta to keep its shape as much as possible
  • Carefully lift the pieces directly onto the plates. Top with some of the cherries and their juice (leave the whole aromatics such as the bay leaves and peppercorns in the pan).
  • Serve with slices of crusty sourdough bread to mop up the juices and/or a crunchy salad (celery, rocket, radish)
