Schär Bread Mix
I have used a few gluten-free flours before and attempted my own mixes to make bread rolls. This was the first prepared mix I’d used and the results were excellent. The colour is pale without being too white. When mixed (I used a stand mixer) the dough had a good consistency, not overly sticky and I was able to work with it without mess.
I had already checked that my dried yeast was gluten-free and then it was a pleasant surprise to find the Schär had included 2 sachets of yeast in the box.
The box is good value When comparing prices with other gluten-free bread flours, the ones I have seen are half the weight of this pack and so this should be taken into account when comparing.
The important thing then is taste. The baguettes I made were light, rose nicely and the baked baguette when sliced had nice air holes – and it tasted quite convincing as bread even for those of us that are used to eating traditional bread.
The bread stayed fresh longer than traditional bread and also toasted well.
