Grilled potato with red mullet
Ingredients
- 200 g potatoes for baking
- 1 small aubergine
- 1 small courgettes
- 1 red pepper
- 200 g mange tout
- 300 g red mullet fillets with skin
- 1 handfull rocket
- 2 tbsp white balsamic vinegar
- 3 tbsp olive oil
- Salt and pepper
Instructions
- Pre-heat your grillPeel the potatoes and cut them into thin slices. Wash and cut the aubergine and courgette also into 1cm slicesMix the vegetables with the potatoes and drizzle with olive oil. Add salt and pepper. Grill the vegetables and red mullet for 10-15 min.
- Roast the red pepper. Blanch the mange-tout.
- Toss the grilled vegetables with the peppers and mange-tout and serve on the plates. Arrange the red mullet fillets on top and drizzle with olive oil and balsamic vinegar. Decorate with a few rocket leaves.
