Baghrir (Moroccan pancakes)

Baghrir, or "Thousand-Hole Pancakes," is a traditional pancake from Morocco. It has a distinctive appearance, light and spongy texture, and numerous small holes on the surface. Baghrir is often enjoyed as a breakfast or snack with served with mint tea.

Equipment

  • skllet or crepe maker

Ingredients
  

  • 500 ml lukewarm water
  • 2 tsp dry yeast
  • cup semolina
  • ¼ cup plain flour
  • pinch salt about ⅛th teaspoon.
  • 2 tsp baking powder
  • 1 tsp sugar

Instructions
 

Prepare the batter

  • Put the ingredients in a blender: water, yeast, flour, semolina, salt and sugar. Pulse until everything mixes well together.
  • Add the baking powder and pulse again.
  • Place in a bowl or container with a cover. The batter will rise and will take approximately 30 minutes.

Cooking

  • Unlike other pancakes, Baghrir is only cooked on one side. Heat a skillet or heavy pan over medium heat, or use a crepe maker (I set mine on level 4 where 5 is max) Pour about ½ cup of the batter into the skillet. Batter should spread towards the edges of the skillet, if not then thin it with more water.
  • Small holes should appear all over the surface, continue cooking until no obvious uncooked surface appears. This should be about 2 minutes
  • Serve warm or at room temperature

Topping

  • It is important to note that the nutrition values shown here are for the pancake only. What you add to it will make a big difference.
    Traditionally, these are enjoyed with butter and honey or you could use syrup, Nutella or other pancake toppings.
    To spread the butter and honey more evenly, I heat the honey a little in the microwave and then stir in a little butter. Put on the pancake while the butter is not fully melted.
  • For a savoury version: Chop up hard boiled egg, add a drop of extra virgin olive oil and a sprinkle of paprika or smoked paprika. Lightly drizzle olive oil on the pancake. Put the egg mix at one end and roll up.
