Cajun spiced squash seeds

A healthy snack using the seeds that you usually throw away

Ingredients
  

  • Butternut Squash seeds
  • 1 tsp Olive oil
  • 1 Tbsp Creole spice see recipe

Instructions
 

  • When you are cooking butternut squash save the butternut squash seeds into a small dish. You don’t need to make these seed snack straight away but do at least this first stage within a few hours. Put the seeds into a small saucepan and cover with boiling water. Let the pan boil for about 5 minutes. Drain the seeds into a sieve. They should be clean of any of the squash flesh. Dab them with kitchen towel to dry them off.
  • Put the seeds into a bowl, or to save washing up, back into the pan (which would now be dry). Add the olive oil and the Cajun spice and mix to cover the seeds well.
  • Transfer to a baking tray and bake for 5 minutes at 150 degrees.
  • These steps do not have to be done all at once. I would normally bake in the oven when the oven is needed for something else.
