Dark Rye Bread

Ingredients
  

  • 350 ml Water
  • 1.5 Tbsp Olive oil
  • 350 g Dark rye flour
  • 150 g Strong white flour
  • 7 g Fast Action Dried Yeast
  • 10 g Salt
  • 10 g Brown sugar
  • 65 g Sunflower and flax seeds plus more flax seeds for the top if finishing by hand

  • Mix the dough using either

Bread Machine method

  • This recipe can be made entirely in the breadmachine using the standard instructions. Bake using wholemeal setting
  • Bread Machine dough setting;
  • Alternatively

By hand

  • or by hand, place the dough in a covered bowl or proving basket and leaving the dough to rise until doubled in size.
  • Deflate the dough by folding it out and kneading it gently into a ball
  • Shape the dough into an oblong and place in loaf tin
  • Dampen the surface with water, sprinkle with flax seeds and dust with flour
  • Cover and leave in a warm place to rise until again doubled in size. Meanwhile switch on the oven 210°C (Conventional oven) or 200°C (Fan oven) and place a casserole dish with water in the bottom of the oven
  • Bake in the over for 35 minutes – longer for a deeper crust
  • Place on a cooling rack and allow to cool before slicing
