Granola

Ingredients
- 4 cups jumbo rolled oats
- ½ cup almonds
- ½ cup walnuts
- ¼ cup pumpkin seeds
- ¼ cup sunflower seeds
- 1 pinch fine-grain sea salt
- ½ cup melted coconut oil
- ½ cup honey
- 1 tsp vanilla extract
Dried fruit optional (not included in nutritional values)
- ⅔ cup dried fruit cranberries, coconut flakes, sultanas etc
Instructions
- Preheat oven to 180ºC and prepare a large, rimmed baking sheet with baking paper or silicone baking sheet.
- In a large mixing bowl, combine the oats, nuts and/or seeds and salt. Stir to blend.
- Pour in the oil, honey and vanilla. Stir until everything is thoroughly coated. Spread the granola evenly onto the tray.
- Bake until lightly golden, about 22 minutes depending on your oven, stirring halfway.
- Leave the granola until completely cool. The granola will crisp up as it cools.
- Pour into a storage container. Stir and break up the clumps to your preferred size.
- If using, add the dried fruit and stir again.
