Moroccan mint tea
Traditional Moroccan mint tea is served in a glass and the pouring from a height to create a froth on top of the glass is an essential part of the "ceremony". When I was working in Morocco, I always asked for my tea to be made with honey and so I have listed that as an option.
Ingredients
- 4 tsp gunpowder green tea
- 4 cups boiling water + more for cleaning/warming pot
- 4 tsp sugar or 3 tsp honey
- 4 sprigs mint
Instructions
- Boil water in a kettle or pot.
- Add gunpowder green tea leaves to your teapot, then about 1 cup of boiling water to cover the leaves. Swirl it around then strain and discard the water.
- Add fresh mint and sugar to the pot. Fill the pot with the measured boiling water and let the tea steep for 5 minutes.
- Serve the tea, by pouring it into the glasses from a height, allowing a frothy head to form on top of each glass.
