Mushroom soup

  • stick blender

Ingredients
  

  • 350 g mushrooms (mixed)
  • 50 g butter
  • 1 tbsp parsley chopped
  • 1 clove garlic
  • dash salt
  • black pepper freshly ground
  • nutmeg freshly grated
  • large chunk of bread
  • 1 litre vegetable stock

Garnish

  • 4 tbsp creme fraiche
  • 4 tsp parsley roughly chopped

Instructions
 

  • Melt the butter in the pan and add the mushrooms. Cook on medium heat until the juices run
  • Meanwhile prepare the stock and break the bread into pieces to add soak in the stock
  • Add the garlic, parsley, nutmeg, salt and pepper to the mushrooms and stir through
  • Pour the stock with the bread into the pan. Simmer for 15 minutes with lid
  • Blend the soup with a stick blender
