Using Sourdough Discard
Maintaining sourdough starter potentially creates more starter than you can use in baking bread but there are lots of ways of using the sourdough discard in other recipes. Sourdough discard is fundamentally flour and water and the process has added some extra body and flavour.
The recipes here include a few variants of Oat/Energy bars which are really delicious and the sourdough binds the ingredients together instead of the high sugar content of traditional recipes. Sourdough discard can also be used to make a really quick flatbread suitable for eating with Hummus. Other sourdough discard recipes include biscuits, cakes, pancakes and crumpets. You can also use it make batter for fish or vegetables.
I keep discard in a 1kg yoghurt pot with a lid. Don’t let it get too old as it will get sour and bitter. Using sourdough discard adds some taste to baking. Also these recipes can be made with ordinary sourdough starter.
