Vegan Omelette

the main ingredient is sourdough discard. Add the toppings of your choice and be sure to add some protein such as vegan cheese

Ingredients
  

  • 120 g Sourdough discard
  • 25 ml Water
  • 1 tsp Nutritianal Yeast
  • ¼ tsp Turmeric
  • ¼ tsp Paprika
  • 1 pinch Onion Powder
  • 1 pinch Salt
  • 1 pinch Black Pepper
  • 1 Tbsp Oil for frying Sunflower, Coconut or Rapeseed
  • Topping of your choice

Instructions
 

  • Mix all the ingredients together in a bowl, beating with a whisk.
  • Heat the oil in a frying pan to a medium heat. Pour in the batter and swirl to cover the base of the pan. Cook for about a minute before turning over.
  • Add the toppings of your choice
  • When cooked, fold over in half and serve
