Wash the fish and pat dry with paper towel.
Season with salt and pepper and dust with flour
Heat up a tablespoon of butter with the olive oil in large flat frying pan or skillet to a medium heat. Cook the fish for 2 minutes per side depending on thickness.
The turn over once again. Add some butter and chopped parsley and cook for another 2 minutes.
Squeeze the lemon over the fish and dress with sprig of parsley

Boiled new potatoes with skins. Drain the potatoes, sprinkle with sea salt and return to the heat for 30 seconds, tossing the potatoes and searing in the salt.
