Preheat oven to 180ºC and prepare a large, rimmed baking sheet with baking paper or silicone baking sheet.
In a large mixing bowl, combine the oats, nuts and/or seeds and salt. Stir to blend.
Pour in the oil, honey and vanilla. Stir until everything is thoroughly coated. Spread the granola evenly onto the tray.
Bake until lightly golden, about 22 minutes depending on your oven, stirring halfway.
Leave the granola until completely cool. The granola will crisp up as it cools.
Pour into a storage container. Stir and break up the clumps to your preferred size.
If using, add the dried fruit and stir again.
