Granola

Ingredients
  

  • 4 cups jumbo rolled oats
  • ½ cup almonds
  • ½ cup walnuts
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • 1 pinch fine-grain sea salt
  • ½ cup melted coconut oil
  • ½ cup honey
  • 1 tsp vanilla extract

Dried fruit optional (not included in nutritional values)

  • cup dried fruit cranberries, coconut flakes, sultanas etc

Instructions
 

  • Preheat oven to 180ºC and prepare a large, rimmed baking sheet with baking paper or silicone baking sheet.
  • In a large mixing bowl, combine the oats, nuts and/or seeds and salt. Stir to blend.
  • Pour in the oil, honey and vanilla. Stir until everything is thoroughly coated. Spread the granola evenly onto the tray.
  • Bake until lightly golden, about 22 minutes depending on your oven, stirring halfway.
  • Leave the granola until completely cool. The granola will crisp up as it cools.
  • Pour into a storage container. Stir and break up the clumps to your preferred size.
  • If using, add the dried fruit and stir again.
