Ingredients
  

  • 250 g plain flour
  • 85 g ground almond
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp bicarbonate of soda
  • pinch ground cloves
  • pinch grated nutmeg
  • pinch black pepper
  • 1 tsp Baking powder
  • 200 ml 200ml clear honey
  • 1 zest of 1 lemon
  • 85 g butter
  • For the icing
  • 100 g icing sugar
  • 1 egg white beaten

Instructions
 

  • Preheat the oven to 160ºC.
  • Mix all the dry ingredients in a bowl
  • Beat the honey and butter together adding the lemon zest
  • Add the flour mixture to the liquid and mix together with a spatula
  • Divide the mixture into 3cm balls and flatten on a baking tray
  • Bake for 15 minutes and transfer to a cooling rack
  • When cool, mix the icing sugar and egg white. Drizzle the icing over the biscuits and allow to set
