Moroccan mint tea
Traditional Moroccan mint tea is served in a glass and the pouring from a height to create a froth on top of the glass is an essential part of the "ceremony". When I was working in Morocco, I always asked for my tea to be made with honey and so I have listed that as an option.

- 4 tsp gunpowder green tea
- 4 cups boiling water + more for cleaning/warming pot
- 4 tsp sugar or 3 tsp honey
- 4 sprigs mint
Boil water in a kettle or pot.
Add gunpowder green tea leaves to your teapot, then about 1 cup of boiling water to cover the leaves. Swirl it around then strain and discard the water.
Add fresh mint and sugar to the pot. Fill the pot with the measured boiling water and let the tea steep for 5 minutes.
Serve the tea, by pouring it into the glasses from a height, allowing a frothy head to form on top of each glass.
