Mushroom soup

- 350 g mushrooms (mixed)
- 50 g butter
- 1 tbsp parsley chopped
- 1 clove garlic
- dash salt
- black pepper freshly ground
- nutmeg freshly grated
- large chunk of bread
- 1 litre vegetable stock
Garnish
- 4 tbsp creme fraiche
- 4 tsp parsley roughly chopped
Melt the butter in the pan and add the mushrooms. Cook on medium heat until the juices run
Meanwhile prepare the stock and break the bread into pieces to add soak in the stock
Add the garlic, parsley, nutmeg, salt and pepper to the mushrooms and stir through
Pour the stock with the bread into the pan. Simmer for 15 minutes with lid
Blend the soup with a stick blender
